Raspberry Gin Sour

4 Raspberries (defrosted if frozen)

60ml Gin

15ml Sugar syrup

15ml Egg white

30ml Lemon juice

¼ teaspoon Vanilla extract (optional)

Muddle the raspberries in a cocktail shaker then add the rest of the ingredients. Dry shake and then add ice and shake again.

Strain into a glass and garnish with crushed raspberries.

Spanish Gin Tonic 

A Spanish Gin Tonic (yes, they dropped the ‘and’) is different to a classic G&T as it contains a bounty of fresh herbs, fruits, peels, flowers and juniper berries.

Fill a large goblet glass with ice and pour over 45ml of your favourite Gin. Add your chosen aromatics (we love cucumber, lemon peel, rosemary and juniper). Top up with a good quality tonic water.

Hibiscus Gin Sour

Hibiscus Syrup

1 cup Sugar

1 cup Water

2 tbsp Hibiscus petals

Combine sugar and water in a small pot and bring to the boil. When sugar has dissolved, stir in the petals and then take off the heat. Leave to steep for at least 30 mins. 

Strain the petals out and store in a sterilised bottle in the fridge.

Hibiscus Gin Sour

60ml Gin

30ml Hibiscus syrup

30ml Lemon juice

15ml Egg white or aquafaba

Dry shake ingredients without ice for 30 seconds. Half fill the shaker with ice and then shake again. Strain into glass and serve.

Strawberry and Rose Gin Fizz

4 Strawberries

1 tsp Sugar (or more if you like a sweeter drink)

60ml Gin

1 tsp Rose water (optional)

30ml Lemon juice

Small pinch of salt

Soda water

Very finely chop the strawberries and put into a small bowl. 

Sprinkle with the sugar and leave for 5 minutes and then mash with a fork.

Fill a cocktail shaker with ice then add strawberry mixture, gin, rose water, lemon juice and salt. Shake then double strain into a glass.

Top up with soda water and garnish with a rosebud.

Plum Sour

If you don’t have plum gin you can use chopped fresh plums or replace the sugar syrup with the syrup from a tin of plums. 

60ml Plum gin

20ml Sugar syrup (to taste)

30ml Lemon juice

15ml Egg white or aquafaba

Dry shake ingredients together in a shaker. Add ice and shake again. Strain to glass and garnish with some crushed black doris plum.

Pink Pepper Gimlet

½ teaspoon Pink peppercorns

45ml Gin

30ml Lime juice

15ml Sugar syrup

Lightly crush the pink peppercorns into a cocktail shaker and then add gin, lime juice, sugar syrup and ice. Give it a good shake and then strain into a glass and garnish with more peppercorns and a dried lime slice.

Colour changing Gin

Colour Changing Gin

1 tbsp Butterfly pea flowers

250ml London dry gin

Steep together in a clean jar for at least 1 hour. Strain to remove flowers.

 

Colour changing G&T

Fill a glass with ice and pour over 30mls colour changing gin.

Top up with a quality tonic water. Squeeze in some lemon juice and garnish with a slice of lemon.
